Not only are the actual coffee beans not too common, or require a lot of specialized growing underground, but coffee machines themselves are rare.

When survival is key, luxuries like coffee aren’t really at the forefront of most people’s minds, but that doesn’t mean its warm, morale-boosting flavor won’t help out. Seems someone’s found a semi-working coffee machine, and while Apollo can get it working, he’ll need some special parts to do so.
Where To Find The Espresso Parts
Espresso is one of Apollo’s quests, and it’s unlocked by completing the prior quest from Celeste, Bees!. You’ll need to head to the Buried City for this quest, and it needs to be completed in one round, or else you’ll have to redo it.
The Espresso Parts needed for this quest are separate from the Coffee Pot Trinket that you have a chance to find in pretty much any lootable container.
Make your way to the street that runs between Corso da Vinci and the Santa Maria Houses, just beneath the section of broken highway, and look for the café on the corner next to the alleyway.
Go inside, go behind the counter in the ground-floor room, and interact with the machine at the corner of the counter, close to the broken AC unit on the wall.
Put any quest-specific items or trinkets in your Safe Pocket to prevent them from being lost and resetting your quest progress, or making you have to reobtain the item, if you happen to get killed during a round.
The quest-specific Espresso Machine Parts will drop from the machine, and the quest objective will update. Pick it up, return to Speranza when you’re ready, then speak to Apollo at his shop to turn in the quest.

As a reward for this pretty simple mission, you’ll get a Coffee Pot Trinket and three Adrenaline Shots, which are incredibly useful to have on hand at all times, as they not only fully restore your stamina but also temporarily increase stamina regeneration.
